Labor Day Lazy Loop cupcake


Nothing says Labor Day long weekend like Lazy Loop Cupcakes.Perfect for whatever you have on the agenda. My personal favorite hanging out watching movies.

Back to the future 1,2&3 anyone? And snacking lots of snaking

This is my version of the old favorite cream filled fudge covered chocolate cupcake. Your tongue will never know that they are a healthy version so snack on.

4 tablespoons unsalted butter

1/4 cup  coconut oil or veg

1/2 cup water

1/2 cup coffee

1 teaspoon pure vanilla extract

1 cup all-purpose flour

1/2 cup agave dark syrup  or 1 cup sweetener stevia for baking

1/4 cup plus 2 tablespoons unsweetened cocoa powder (not Dutch process)

3/4 teaspoon baking soda

1/8 teaspoon salt

1 large egg

1/4 cup buttermilk

Preheat the oven to 350°.  put paper liners pr greese well 12-cup muffin tin or 24 mini muffin

In a medium saucepan, melt the butter with the oil and water over low heat.

In a large bowl, sift the flour with the sugar, cocoa powder, baking soda and salt. Add the melted butter mixture and  1 teaspoon pure vanilla extract and beat with a handheld mixer at low speed until smooth. Add the egg and beat until incorporated, then add the buttermilk and vanilla and beat until smooth, scraping the bottom and side of the bowl. Pour the batter into the lined muffin tins, filling them about three-fourths full.

Bake the cupcakes in the center of the oven for about 25 minutes, until springy and a toothpick inserted in the center comes out clean. Let the cupcakes cool slightly, then transfer them to a rack to cool completely. 

With a paring knife cut a x in the top of cupcake


! pint heavy whip

1/ 2 cup stevia confectioners  or powdered sweetener

11/2 teaspoon flavoring of choice  for a grownup treet up liqueur like kahlua or baileys

On low speed whip cream and flavoring until blended add stevia or sugar slowly

whip on medium until wiped if a stiffer texture add more sugar or steva

dont over mix or texture lumpy and greasy.

set a side about 1/4 cup for the loops on top

put the rest in a zip bag put in refrigerator to frem

cut the tip off the coner  and squeese in to the top of the cupcakes


1 8 ounce sugar free chocolate chips

1/2 cup condensed milk not sweetened

2 Tablespoons baking coco

1 Tablespoon agave syrup

In a double boiler  place all ingredients and stir until chocolate is melted and and ingredients are well combined remove pan and cool until chocolate get thicker not to thick to spoon over top of completely cooled cupcakes.
